Crispy Chicken Sandwiches

Well it is almost feeling like it is time to start making those summery feeling meals. You know, what I mean right? You want fresh veggies and fruits so you make salads and sandwiches... well today is feeling like one of those days even though there is a little chill in the air still so I am going to make a hot sandwich just to come to a compromise with the weather.



Ingredients:
Mayo with garlic
Marinara sauce (jar from store)
Foccacia buns
Thawed Chicken breasts
2-3 bacon slices per sandwich
avocado
Monterrey Jack Cheese
handful of arugula leaves
Tomato, sliced
1/4 cup oil
1-2 eggs
1-2 cups bread crumbs
1-2 cup - 3/4 cup flour
salt and pepper

Oatmeal Chocolate Chip Cookies

You can eat cookies at 9:30am right? Certainly! These ones have oats in them so that counts as breakfast. I found with these cookies on the first tray that they came out a little flat. I stuck the batter in the fridge for about 20-30 minutes and they cooked up perfectly. These cookies were even more divine with the chopped up milk chocolate bar.

Ingredients:
1 cup softened butter
3/4 cup brown sugar
1/2 cup white sugar
2 eggs
1 tsp vanilla
1 3/4 cup flour
1/2 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 cup cooking oats
1 cup chocolate chips
plus some extra chopped up chocolate bar

Asian Noodle Entree Salad

Back to thinking about food! These past couple of days have been filled with doctors and an ER room. My youngest daughter Lucy does not have pneumonia, phew! You would think that by Spring sickness would not be in the air. It is time to think about sunny hot days and this is one salad that is great on those days where cooking is not something you want to do and you need something light and delicious.




Ingredients for dressing
1/4 cup olive oil
1/8 cup rice wine vinegar
1 tsp Soya Sauce
juice from a lime (at least a good tbsp or 2)
1 tbsp brown sugar
1 garlic clove, minced
1/4 tsp minced fresh ginger
2 green onions, minus the white part

Artisian Lime Bread

If you know you are having company over in the next couple of days then you will have plenty of time to make this bread. If your company is coming tonight, you're outta' luck. This bread takes about 18-24 hours to make but it's really easy and worth the wait. This bread is effortless to make as it needs no kneading.

Ingredients:
1/4 tsp yeast
1 3/4 cup warm water
3 cups flour
1 3/4 tsp salt
1/2 tsp lemon or lime zest
optional: 2 tsp chopped fresh Rosemary

Sweet n Sour Sauce

On my last post I posted some great meatballs. Incase, you were wanting to make what was in my picture I have decided I would post the sauce that I made with the meatballs. Growing up, I loved anything with sweet n' sour sauce. It could of been meatballs, chicken wings or ribs and I was in heaven! This sauce goes great with my Meatballs


Ingredients:
1 1/2 tbsp cornstarch
2 tbsp brown sugar
juice from a can of pineapple, plus pineapple
3 tbsp ketchup
1 tbsp white vinegar
2 tbsp soya sauce
optional:
1/2 cup sliced peppers (a variety)
1/2 sliced onion
cilantro for garnish

Meatballs

These meatballs are great for either Spaghetti n' meatballs, Swedish Meatballs, appetizer meatballs... They are really easy to make and really tasty. Last night, I made these meatballs with a sweet n' sour sauce and placed them over a bed of rice. They were delicious!


Ingredients:
1 lb raw ground beef
1/2 cup bread crumbs
1 handful of chopped fresh parsley
1 egg
2 tsp Worcestershire sauce
1 garlic clove crushed
1 tsp dijon mustard
1/4 tsp ground pepper
1/4 tsp salt

Meat Cannelloni

I think I could eat some form of pasta every night. You would think by now I would be able to estimate the correct amount of pasta when I cook it. I either cook way too much or not quite enough. The good thing with this meal is that you just have to count the amount of noodles you need and you can't fail:)

Ingredients:
1 lb ground beef
1 small onion, chopped
1-2 celery sticks, chopped
1 carrot, chopped
2 garlic cloves, minced
1 can tomato sauce
2-3 tbsp tomato paste
handful of fresh parsley
salt and pepper to taste
approx 14 cooked cannelloni noodles
2 tbsp butter
2 tbsp flour
1 1/2 cups milk
1/2 tsp fresh ground nutmeg
salt and pepper to taste
freshly ground Parmesan cheese
