Hawaiian Muffins

I miss the sun, so badly! To get myself in the spirit of summer I decided to come up with a Hawaiian style muffin. The taste of coconut and pineapple was soooo good. These muffins would be great to freeze as well as the batch does make 18. Mind you if you live in my house they won't make it to the freezer.


Ingredients:
1 stick butter (1/2 cup)
1/2 cup brown sugar
1/2 cup honey
1 can drained crushed pineapple
1 tsp vanilla
2 eggs
1 cup sour cream
2 cups flour
1/3 cup bran flakes
1 cup coconut flakes
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt

Preheat your oven to 350 degrees and grease a 12 cup muffin tin

Cream of Mushroom Soup

I am back from my wonderful vacation! Over 2 weeks in Phoenix, Arizona relaxing in the sun was perfect. Coming home to rain, not so fun. But, that is okay. I can warm up tonight with this unbelievable Cream of Mushroom Soup.


Ingredients:
4 tbsp butter, separated
1 small onion diced
3 tbsp flour
6 cups chicken stock
salt and pepper to taste
1 tsp fresh thyme chopped up
1 bayleaf
2 sprigs of parsley chopped up
1 lb mushrooms, stems removed and chopped
1 tsp lemon juice
2 egg yolks
1/2 cup whipping cream or heavy cream

Vacation!

Sweet Potato Gnocchi

Last week, sweet potato gnocchi was requested for my blog. After a couple of batches I think I mastered it! This was delicious. I served it alongside a green salad and Coq Au vin. The butter sage was delicious on top of this sweet potato gnocchi. It is definitely time consuming to make but so good. As you follow my directions, before the cooking process you can place the gnocchi on a floured baking sheet, place them in the freezer. Allow to freeze about an hour or two so they don't stick together and then place them  in a bag and continue freezing until ready to use. They freeze great and still taste delicious the next time you need a great side dish!

Ingredients:
1 large sweet potato
1/2 cup cream puff paste (my ingredients will be listed below)
1/2 cup grated Parmesan cheese, separated
1/2 tsp freshly ground nutmeg
1 cup flour, plus more
Butter Sage mixture (my ingredients are listed below)

Ceaser Salad Dressing

I don't think in my entire life have we bought a bottle of ceaser dressing. I grew up with my dad always making  his own dressing so I have a really hard time buying something that doesn't taste nearly as good as when you make it yourself. This isn't the same recipe my dad uses. Not because mine is necessarily better but mine is definitely easier to make and all you need is a small dish and a spoon. I never measure the ingredients in this dressing but I will give you estimates.

Ingredients:
1/4 cup mayonnaise (do not use miracle whip)
1 garlic clove, minced
1/2 a freshly squeezed lemon
salt and pepper
1/4 tsp worcestershire sauce
1/8 tsp dijon mustard (regular mustard if you don't have dijon)

Pancakes

I have always known that I 'like' pancakes but recently, I have realised that I 'love' pancakes. This is so bad because I have already made them twice this week for breakfast and contemplating making them again tomorrow. It doesn't help that my daughter Lexi, asks for these every morning too. I can't even look at this picture without my mouth drooling. I better finish writing this and shut the computer or I might just have to have an evening snack:)

Ingredients:
1 3/4cup flour
2 tbsp brown sugar
1 tbsp baking powder
1/4 tsp salt
1 egg
1 cup milk
1/2 cup sour cream

Easy bolognese lasagna

This is a great go to meal on those days where you don't have a ton of time but you still want a warm home cooked meal. My sister found a very similar recipe to this one and shared it with me so now I will share with you my version.

Ingredients:
1 lb ground beef
Salt and pepper
2 large garlic cloves, minced
1 onion chopped
1 carrot, grated
1 celery stick, chopped
1 sprig of rosemary, chopped
3 tbsp tomato paste
1 cup white wine (if you don't cook with wine add another cup of broth)
2 cups beef stock
3 tbsp butter
2 heaping tbsp flour
2 cups milk
1/2 tsp freshly ground nutmeg
Freshly grated Parmesan cheese
1 lb of small noodles

Pumpkin Cinnamon Buns

I  made these pumpkin cinnamon buns the other week when my sister-in-law came over because I know that pumpkin baked goods and cinnamon buns are her favourite. At first I was a little skeptical to try and attempt making these but they ended up being such a moist cinnamon bun with a subtle pumpkin flavour. I will make these again! Plus they have a great orange colour to them.

Ingredients:
2 tbsp butter
1/2 cup milk
2 1/4 tsp yeast
1 cup pumpkin puree
1 tsp vanilla
1/4 cup sugar
1 tsp salt
4- 4 1/2 cups flour

1/4 cup butter
3/4 cup brown sugar
1 tbsp - 2 tbsp ground cinnamon
1 tsp freshly ground nutmeg
