I think I could eat some form of pasta every night. You would think by now I would be able to estimate the correct amount of pasta when I cook it. I either cook way too much or not quite enough. The good thing with this meal is that you just have to count the amount of noodles you need and you can't fail:)
Ingredients:
1 lb ground beef
1 small onion, chopped
1-2 celery sticks, chopped
1 carrot, chopped
2 garlic cloves, minced
1 can tomato sauce
2-3 tbsp tomato paste
handful of fresh parsley
salt and pepper to taste
approx 14 cooked cannelloni noodles
2 tbsp butter
2 tbsp flour
1 1/2 cups milk
1/2 tsp fresh ground nutmeg
salt and pepper to taste
freshly ground Parmesan cheese
Brown and drain your ground beef. Add onion, celery, carrot and garlic. Season with salt and pepper
Add your tomato sauce and paste and parsley. Let simmer for about 30 minutes. Meanwhile cook your cannelloni noodles until slightly undercooked
Line a 9x13 pan with parchment paper. Fill each noodle with meat mixture and place in pan
Top of noodles with remaining meat mixture. Set aside. Preheat oven to 350 degrees
In a sauces pan, melt butter and add flour. Stir. Let cook for 1-2 minutes and add milk, nutmeg, salt and pepper. Bring it to a light boil and remove from heat once thickened. This sauce is called bechamel sauce. Pour over top of your cannelloni
Shred a generous amount of Parmesan cheese on top of your bechamel sauce
Cook in your preheated 350 degree oven for about 25- 30 minutes until it is piping hot and noodles are cooked through
Indulge yourself in this yummy pasta!









Tried this over the Easter weekend. Both of my boys ate it so that is always a hit! Slipped the leftovers into the freezer for two quick weekday dinners :).

You absolutely could. Have you used those noodles before? If you enjoy them I would say go for it! I sometimes find them to be on the starchy side so I tend to use noodles that I have to boil but non-cook are a lot quicker!
