Pancakes

I have always known that I 'like' pancakes but recently, I have realised that I 'love' pancakes. This is so bad because I have already made them twice this week for breakfast and contemplating making them again tomorrow. It doesn't help that my daughter Lexi, asks for these every morning too. I can't even look at this picture without my mouth drooling. I better finish writing this and shut the computer or I might just have to have an evening snack:)

Ingredients:
1 3/4cup flour
2 tbsp brown sugar
1 tbsp baking powder
1/4 tsp salt
1 egg
1 cup milk
1/2 cup sour cream

In a mixing bowl put 1 3/4 cup flour

Add 2 tbsp brown sugar

Mix in, 1 tbsp baking powder, 1/4 tsp salt and 1 egg

Whip with a wire whisk, add 1 cup milk and 1/2 cup sour cream and mix well

Preheat a buttered or greased grill or frying pan.  Drop by spoonfuls. You may need to adjust your heat if they are browning to quickly.

Once there are bubbles forming on the tops they are ready to flip

Top with butter and maple syrup!
