Pumpkin Cake Bars

Moist like a cake, cuts like a bar! Well, it is Fall and I love baking with pumpkin now. Even better when you use cream cheese frosting to top it off:) I hope you enjoy this sweet little dessert. They go great with a cup of coffee.

4 eggs
1 cup sugar
1 cup vegetable oil
1 can of pumpkin (mine was 15 ounces)
2 cups flour
2 tsp baking powder
1 tsp salt
1 tsp baking soda
1 1/2 tsp Cinnamon
1/2 tsp fresh nutmeg
1/4 tsp ground allspice

Icing: (I never said these were healthy;)
1 8 ounce bar cream cheese
1/2 cup butter, softened
1 tsp vanilla extract
1 tbsp milk
1 cup icing sugar
Preheat your oven to 350 degrees

Basil chicken in White Wine Sauce

As you can maybe previously tell, I love cooking with Red wine and White wine. I think it makes sauces have such a yummy distinct taste. If you don't like opening bottles of wine for cooking you can always buy cooking wine right in your grocery store. It is located right near the vinegars. Just don't mistake your bottles of cooking wine for vinegars or you will be in for a big surprise when you taste your food. If your concern is that you are cooking for your family and you don't want your kids to ingest wine, don't be concerned. As you cook your sauces the alcohol is being cooked out of your food. I hope you enjoy!

2 large raw chicken breasts, thinly sliced
handful (approx 7 leaves) of fresh basil, chopped
2 garlic cloves, minced
1 bay leaf
1/4 cup olive oil
Handful of Oyster or chantrelle mushrooms  (optional)

White Wine Sauce:
3 tbsp butter
1 clove garlic
2 1/2 tbsp flour
1 cup chicken broth
1 cup white wine
salt and pepper to taste

Creamed Corn

Oops! I forgot to take pictures while I was cooking this dish and only realised when I was almost finished:) This dish isn't difficult so I will fill you in with all the details and then add the photos that I actually did take once I get to that point. This dish is fantastic, especially with Thanksgiving dinner, Christmas dinner or even just a roast chicken dinner. This dish is a regular at our family dinners because, it is just that good.

5-6 strips bacon
1 small onion
1/2 pepper
salt and pepper
1 garlic clove, minced
1/4 cup chicken broth
1/3 cup whipping cream
